A recommendation for life about ceviche. Ceviche is eaten with a spoon, not a fork. And the complete and correct way is to put the fish, onion, tiger's milk in a tablespoon and, to balance the flavor, the sweet potato. This way you get the magic and explosion of flavors and textures in a spoonful of ceviche.

@@InAPickleCooking Yes. Been to LaMar, Isolina and El Mercado. I Usually go to Pardo's Chicken. You need to try Mayta and Huaca Pucllana. I also love Edo for Nikkei food. So many choices...........

Many years ago, Lorena Valdivia traveled to Australia and working in a restaurant met Jason Nanka who used to prepare Peruvian dishes for her. They got married and came to Peru to open an ecological friendly restaurant. In one of the trips to the Andes Montains with another chef they had a fatal car accident. The most famous Peruvian chefs were at their funeral, Jason's parents totally devasted came from Australia and well as Lorena's with so much pain that they did not know what to do.
