thanks for calling out the cooking in batches! I definitely made the mistake of throwing all my chicken in at once, and it usually ends up boiling the chicken more than crusting it
I freakin LOVE chilaquiles!! I throw a few chips in the sauce last minute & put fresh ones one the plate. Slap an egg & oaxaca cheese on there & it's overrrr!! Both roja & verde are good but Verde wins every time!
I may try this with lamb instead of chicken. That allspice curry combo sounds great for lamb.

I would wear gloves for that chicken massage. Habanero juice in the eye layer will suck! (Capsicum oils can stick to the skin and be difficult to remove with a hand washing.)

Should probably toast your "curry" paste / aromatics in coconut oil first, then add your liquids. Simmer the protein in the coconut milk and chicken stock (not cubes). Maybe use fish sauce for salt / flavour. But that's just my opinion. We all have our own ways. Dude is ADD focused on efficiency, which is his thing; but, the food should come first. I do appreciate that he adds the potatoes and peas at the end (so as not to overcook) and his finishing flavour moves.

Nice, looks good, I've been looking for more (non-Indian/Thai) recipes using coconut milk.
You should try some actual Jamaican soup recipes. Try Gungo Pea Soup (make sure you use white sweet potato, not orange)
I love these simple technique recipes -- you just take a bunch of stuff you have on hand and put it together to make something nice. It's how I cook too, but with a lot less success! One thing I learned, though, from other YT chefs: I always have a medium deli container on my work surface, just behind the cutting board, as a little wastebasket. Peels and stem ends and other discardable ends of things go in there, and that keeps the cutting board less crowded. I recommend giving that a try!
No one is going to comment on how he cuts up raw chicken with his bare hands and then just starts handling everything in the kitchen including sticking his fingers in the salt dish, essentially contaminating the salt with salmonella? Chicken cooks in a few minutes while potatoes takes much longer, so I don't understand why you cook the chicken for 20-30 minutes before putting the potatoes for another 15-20.
He’s using chicken thighs. They can handle the long cooking.
@davidalcantara8122 obviously, but it's not relevant, you missed the point.
You extract more flavour from the chicken by cooking it longer, as well as collagen and fat. All that will improve the stew without hurting the meat.

This stew looks very good, making soups out of curries is always a banger. Usually for Jamaican food, "peas" can be various sorts of beans, typically green pigeon peas called "gandules" in Spanish

Just curious Ethan, not a big fan of pork? I picked up some thin pork chops the other day and checked cookwell to see if you had any pork recipes on there and I may have been looking in the wrong spot but I couldn't find anything. I ended up just swapping out chicken for pork on the chicken fried rice recipe but was surprised to see there weren't any pork recipes.
There is no category for pork on his website but if you use the search bar and manually type in pork there are at least 3 recipes that use pork chops.

Yep for a stew like this, not much of a difference but for a roasted bird it's a bit easier to get more even browning with the less moisture!
As a plus with the organic air-chilled chicken, you're way less likely to get listeria.
Replace the coconut milk with water and you're basically making a Jamaican curry.
